ESTABLISHMENT OF A CASINO MOCCA ROASTERY
The Casino Mocca roastery was founded by Lajos Horváth, Szabolcs Temesvári and Zoltán Kis. Since the beginning, they have been based in Budapest, where there was a shortage of quality coffee before Casino Mocca was founded. The founders themselves boast several titles from barista competitions. Lajos holds theWorld Cup Tasterstitle and Zoltán won the 2012Jazz Coffee Championship.
THE MAIN VALUE OF COFFEE
The most important thing for Casino Mocca Roastery is consistency and uniformity. In fact, according to their philosophy, a barista should not spend all day setting up the machine, but should spend more time developing sensory skills. Technical skills can be learned in a few hours, but they won't work as perfectly as they could without the sensory ones.
VISUAL OF THE ROASTER
You may be wondering why I want to talk about the visual of the roastery, but the reason is simple. Casino Mocca has undergone a visual makeover in 2021, as this is also one of the factors that distinguish roasters from their competitors. They use the colour on the coffee packets to distinguish whether the coffee is filter roasted or espresso roasted , and a second complementary colour indicates whether the coffee is processed in a natural way, i.e. dry or washed.
WHERE TO TASTE CASINO MOCCA COFFEE
The Casino Mocca roastery does not have its own coffee shop in Budapest or elsewhere in Hungary. They supply their coffee to many Hungarian cafes and cooperate with cafes in other European countries. For them, sharing the same values is an important factor for starting cooperation.
One of the founders, Zoltán Kis, mentions this topicin an interview. Running a roastery and a café is a huge difference, he says, and he wouldn't dare to have his own café. Even though he has thought about it in the past.
CASINO MOCCA COFFEE - ROASTING AND SELECTION
All of their coffees are roasted for both espresso and filter coffee. The coffees are roasted on a Probat roaster, which is very popular among roasters.
They only buy coffee from exceptional producers. Their primary focus is on bringing out the flavour profiles that are characteristic of the coffee's origin. In roasting, they also use their years of experience in barista competitions and the overall operation of the coffee industry.
