Homemade coffee ice cream and popsicles [recipes]

In this article, we will show you recipes for a classic coffee popsicle, made with only 3 ingredients, as well as a vegan coffee ice cream or a coffee popsicle with Baileys.


Homemade coffee popsicles

We all know that coffee is the best start to the day. On hot summer days, though, an ice cold Cold Brew or other iced coffee may satisfy us. But what if you're just in the mood for something sweet and refreshing, and you also need your daily dose of caffeine?

The solution is coffee popsicle, which has both the sweet refreshment of summer and the delicious taste of coffee to jumpstart your body at any time of the day .

And what's the best part? These popsicles consist of just three ingredients and are so easy to make, you can make them in the comfort of your own home whenever you feel like it. So let's show you how to make them.

To make coffee popsicles you will need:

  • 2 cups of cold brew coffee - I recommend using Cold Brew
  • ¼ cup sweetened condensed milk
  • ½ cup heavy whipping cream

First of all , while therecipe is quick and easy, you needto account for several hours of freezing in the freezer afterwards.

  • In a small pitcher or larger bowl, add the coffee, sweetened condensed milk and heavy cream and mix everything well.
  • Pour the mixture into about ¾ ofeach popsicle mold. Place the mould in the freezerfor an hour.
  • After an hour, remove the mold from the freezer and place a popsiclestickin each one. Put the mold back in the freezer for about 5 hours.
  • When you want to enjoy the popsicle, let itsit for a few minutes so it can be easilyremoved from the mold.

If you don't have a popsicle mold at home, you can use a yogurt cup or perhaps the muffin tins I used.


Vegan version of coffee popsicle

Since this popsicle is a real treat, I really want everyone to enjoy it. That's why I have a vegan versionfor you, but feel free to try it out because it's also absolutely delicious.

This recipe is also very simple and can be made with a blender and three ingredients, which are:

  • 1 can of coconut milk,
  • 1 cup of cold brew coffee,
  • 2-3 tablespoons of maple syrup.

Now how to do it? Simply putall three ingredients in the desired amount in the blender and blend. Then pour intoice cream molds or yogurt cups and place in thefreezer for at least 3 hours until frozen. Then just get the popsicle out of the mold and you can enjoy it by the pool or share with a group of friends.


If you prefer acreamier popsicle, add 1 more can of coconut milk to the mix , if you prefer it more watery and to make the coffee taste stronger, add only half a can.


Coffee popsicle with Baileys

This is a recipe that is guaranteed not to be missed at any summer barbecue with a group of friends, as the right summer refreshment with a splash of alcohol. It's a bit more complicated than its two predecessors, but it tastes divine.

To prepare ten servings of popsicles you will need:

  • 250 ml of cream
  • 100 ml sweetened condensed milk
  • 300 ml of coffee
  • 100 ml Baileys Chocolat Luxe
  • 100 g milk chocolate

First ,mix the condensed milk with 100 ml of creamin a bowl and put one tablespoon in each popsicle mould and place in the freezer for 20-30 minutes. Meanwhile, mix the rest of the cream, coffee and Baileys.Fill the popsicles to the brim with this mixture . Finelychop the chocolate into the prepared popsicles and place in the freezer for 4-6 hours.

Caramel-coffee popsicle

Another recipe is a caramel-coffee popsicle that you will definitely love. Again, it's very simple to prepare, so let's show it off.

You will need:

  • ¾ cup filter coffee
  • 1 tablespoon granulated sugar
  • 1 ½ cups of milk (you can also use oat milk, which is great for this)
  • 3 tablespoons of caramel

Make your coffee andwhile it' s stillhot, add atablespoon of sugar and stir well to dissolve the sugar and let the coffee cool.Pour the milk and caramel into a small saucepan andstir to dissolve the caramel. Then add the coffee to the mixture and stir again. Remove the mixture from the stove and let it cool completely.Pour the cooled mixture into popsicle molds and place in thefreezer for 4 hours. When serving, you candecorate with homemade whipped cream.


If for some reason you don't want or can't have caffeine but love the coffee flavor, I recommend using decaffeinated coffee, with which the popsicle will taste just as delicious.
