How to choose coffee for a café

WHY IS ITPASSÉ TO CONSIDER ANY COFFEE OTHER THAN THE CHOICE?

With good coffee, you always know where it comes from. The label indicates the country of origin, the region and the name of the farmer who grew it. You know whoworked with the coffee, how it was grown, where it was stored and how it was imported.

YOU CAN EITHER DO QUALITY OR QUANTITY.

If you're thinking of buying industrial coffee from a wholesaler, don't expect much from it.Why?Because with the volume of coffee, the big companies need to buy it as cheaply as possible and then sell it at the highestmargin. Often this means that the company is buying defective or old coffee.

What do you do to cover up these defects? You roast it long and hard. What's the result? Over-roasted coffee that loses its specific flavours, its aroma may not be pleasant at all, it is bitter and oily. This is because the oils that are supposed to stay inside the bean come to the surface during roasting. As a result, it almost doesn't matter which brand you drink.

When selecting coffee, pay particular attention to freshness, whether the coffee has a stated origin, how you plan to prepare the coffee and, finally, what you expect the final taste to be.

If you're new to the world of select coffees, it's definitely worth considering working with your local roaster for several reasons:

  1. You'll support the economy in your region.
  2. You'll establish friendly relationships and mutual trust.
  3. You will be equal partners.
  4. With the help of professionals, you will be able to choose the best possible coffee for your needs.
  5. The deal doesn't end there. A small roastery will always be there to help you if you need it.

If you have the opportunity, ask for samples of the roaster's coffee. The best way to get a better understanding of the different flavours of coffee is to take part in a coffee cupping session.

HOW TO KNOW A GOOD COFFEE

You don't have to be a certified expert to know quality coffee. It is enough to remember these simple rules.

  1. Beans should not be under-roasted (too light) or over-roasted (too dark to oily).
  2. The beans should be whole, of the same size and colour. There should be no deformed grains or fragments.
  3. You will not find insect-infested beans, twigs or stones in quality coffee beans.
  4. Quality coffee beans have a strong aroma and smell. If you don't smell the coffee, you won't like it.
  5. Go with your gut. Coffee is just like your partner - it looks nice and smells intoxicating. You'll love it immediately.

Remember! Choosing a coffee is definitely not a one-time thing. The selection of coffee on offer varies according to the harvest. It's a good idea to ask your local roaster which coffees are in season.
