Introducing the Nuova Aurelia
Everything that would make a barista's life easier. That was probably the mantra of the designers of the new Nuova Aurelia. It has been made so that its technology works with the barista (co-working technology soulution). In addition to its ergonomic features, the coffee machine also has elements that are automatic and programmable. Some of these we have already detected from other new models of coffee machines from the Nuova Simonelli Group. Others are brand new and are making their debut with the Nuova Aurelia.

Coffee machine and grinder. How do they play together?
Technology Bluetooth and sensors for portafilter identification. This is the basis, firstly, for the automatic adjustment of grind, coarseness and time, secondly, for the evaluation of the correct coffee extraction recipe. The grinder and coffee machine can independently detect the type of portafilter. The assigned stored recipe then takes care of the rest. If you happen to have accidentally run the grind for a single batch of coffee into the portafilter for a double espresso, it can't happen with this technology. Sensor information obtained by the portafilter will automatically ensure the correct recipe is selected, including the amount or temperature of water.
There is also a feedback between the coffee machine and the grinder. The built-in Bluetooth technology in both machines ensures data sharing of the espresso just prepared. The data collected helps fine tune the grind in real time so that the set recipe is maintained. In short, the grinder's coffee machine will confirm the correctness of the grind or its deviation depending on the extraction that has just taken place. The grinder adjusts its settings accordingly. These common minor adjustments usually have to be observed by the barista, based on a constant measurement of each extraction. The barista then slightly adjusts the mill during the day to the current situation caused by, for example, a higher volume of orders, a change in the temperature or humidity of the environment, warming up of the mill, etc.

Electronic nozzle control
With this new Aurelia, you always have a choice. If we are talking about milk and its whipping, you can follow the classic way - by simply turning the knob, i.e. the steam nozzle valve. Or whip the milk with maximum efficiency by selecting one of the 9preset whippingrecipes on the knob display. These presets can be tailored to each type of milk you offer. This way, every barista in your café will always have a beautiful cappuccino made from milk or alternatively a plant-based beverage.
The selection of the whipping preset is completely intuitive.You name and assign an icon to each saved recipe. Modifying the recipe consists of adjusting the temperature and air percentage. This is an advantage especially for cafes offering alternatives to regular milk. Depending on the type of herbal drink and also on the manufacturer, the specific composition and thus the whipping method varies slightly. In general, it is best to target a slightly lower temperature for soy or oat milk alternatives , for example. Looking at product consistency, automation of milk whipping is quite necessary for cafes where there is a rotation of baristas/shifts.
E-Milk and E-Steam technology
The electronic steam nozzle control function is based on innovative E-Steam technology, which ensures precise steam dosing. And also the E-Milk technology. This provides automation in whipping in terms of temperature and the type of milk foam you want to achieve.
