Bayardo Jose Jiménez Rodríguez is the man behind the Brisas del Mogotón project. His farm is a precious heritage located in an idyllic setting in the picturesque village of Achupacha in San Fernando. His journey began under the guidance and teachings of his father. From him he inherited the beautiful Brisas del Mogotón coffee plantation, which has been passed down from generation to generation. Although Bayardo is the main caretaker, his two brothers are also actively involved in the coffee farm.

This natural batch undergoes a 36-hour dry fermentation. Then the cherries are pickled in African wine and left in the sun for 30 days. During the coffee harvest, the farm is busy. The day starts early at 6am when the coffee pickers head out into the fields to carefully pick the ripe cherries. At 3 p.m., the freshly picked coffee cherries reach the wet mill, where Bayardo and his team decide on a specific processing method.

Bayardo has big ambitions for the future of his farm. He is currently working on obtaining certifications and wants to build a garden with new and exotic coffee varieties. One of his ultimate goals is to enter and win the prestigious Cup of Excellence competition, which is proof of his commitment to producing exceptional coffee.

Nicaraguan coffee is one of the best coffees in the world. You'll be captivated by its smooth and balanced taste, full of fruity notes. In this particular coffee from Brisas del Mogotón, you will be enchanted by the notes of peaches and dried fruit, complemented by the sweet taste of caramel.

Recommended for filter coffee. It is for this method of coffee preparation that the fine roasting profile has been created. In addition to using it for classic drip coffee from a dripper or drip coffee machine, you can also enjoy coffee from a French Press, AeroPress or Chemex.
