About Finca Aurora
The Ferrufino family founded their coffee business in 1992. In 2004 they bought the Finca Aurora plantation in Nicaragua. The entire family works together to produce excellent coffee with sustainability and the local ecosystem in mind. They are RFA (Rainforest Alliance) certified.
Finca Aurora is one of the first farms in Nicaragua with fully integrated on-site coffee production. The coffee is produced, washed and dried on the farm. It is then ground, sorted and packaged at Beneficio Finca Aurora under the supervision of the farm team, allowing for complete quality control throughout the process.
After selective hand-picking, the cherries are stored for drying on drying beds or terraces on the farm. They are then raked and turned frequently to ensure even drying, which takes approximately 25 days.

Unfortunately, not all cafes will serve the real espresso macchiato we're going to talk about today. So let's take a look at what it's all about.
