Sweet processing using the honey method
The fruits are hand-picked at optimal ripeness , sorted by quality and then processed using the "honey" method , in which the beans are stripped of their skin, but part of the sweet pulp remains on them, which gives the coffee a rich flavor and subtle sweetness during drying.
