Extraction lever system

The lever system of this professional coffee machine allows you to manually modulate the pre-infusion for each batch. When you lower the lever, hot water from the boiler soaks the coffee. The more the barista pulls the lever, the longer the pre-infusion phase. A good professional waits for the first drops of coffee before lifting the lever; this means the water has infused all the coffee. For an effective pre-infusion, the water pressure should not exceed 2 bar when entering the group.

The lever and technology for perfection in the cup has technical features that offer creamy and delicious coffee. The secret is in the heat exchangers that control the temperature of the water to optimize the quality of the extracted coffee.

Technology meets the lever espresso machine

In typical lever espresso machines, the water that enters the group comes directly from a boiler, which is known to have a pressure of 1 to 1.2 bar, corresponding to 120 to 130°C. Basically, this is the same water used to produce steam. Instead, in the Victoria Arduino VA358 White Eagle, which uses heat exchangers (although it is a lever machine), the temperature of the water can be controlled to optimise the quality of the coffee extracted. In this case, for an excellent pre-infusion, a special pressure reducing valve reduces the water pressure, which is usually 4 to 6 bar. These specifications make the coffee extracts of the VA358 White Eagle Leva particularly creamy and unburnt.

Technology that ensures maximum temperature stability of the espresso

Thus was born T3, a technology that allows the barista to set three temperatures. What do you get? Control of the thermal precision of the water supply, resulting in temperature stability and, ultimately, the perfect espresso. This is also thanks to the electronic system, with probes for temperature, pressure and PID that control each variable.

New technology for milk frothing

The VA358 White Eagle Leva is also available with Easycream, a technology that allows you to heat and froth milk according to your preference, thanks to an innovative nozzle with "tangential holes" and a steam and air mixing system. This system is highly appreciated by café chains because it produces creamy milk that is fragrant and consistent.

An innovative system that prevents scorching

The thermal insulation guarantees the safety of the barista; and not only that, but better and easier cleaning and therefore better hygiene. The new thermally insulated "Cool-Touch" nozzle prevents unpleasant burns and can speed up the cleaning of the coffee machine.
