About the farm Manuel Carhuajulca
Farmer Manuel Carhuajulca Olano grows the Villa Sarchi variety on his farm Finca La Balsa. La Balsa is located at an altitude of 1550 metres in Gracias Dios, Amazonas region. The farm is certified Organic (BIO). The Villa Sarchi variety comes from the village of Sarchi in Costa Rica. It is a natural mutation of the popular Bourbon variety. This variety thrives at higher altitudes and prefers shade, making it ideal for farms where the coffee tree is planted in harmony with the surrounding forest. The coffee is harvested by hand and the ripe cherries are sun-dried for about 15 days.
Filter roasting
It is a light roast suitable for Aeropress, Chemex, Hario, French Press and other alternative methods where it is advantageous to highlight the terroir specificities of the coffee.
Modern espresso
Is a roast for lovers of lighter roast espresso with lively acidity. Cafés claiming to be third wave will serve such coffees.
We refer to classic espresso as noir.
This is a darker roast ideal for mocha pots, super machines, or people who prefer espresso with lower acidity.
